Chicken of the Woods late find

I came across a big Laetiporus growing on a fallen oak while I was out surveying. The top layers were pretty tough, but the lower shelves were still nice and tender, so I went ahead and collected some. I vacuum-sealed it for later use, can't wait to try it out.

Wow, nice find!
I also just started eyeing a few logs around my local park for a while, but no luck yet.
Just a heads up, the texture on those big ones can be a bit challenging, even the tender parts.
It's best to cook them low and slow to really get them to break down and taste great.
Slicing it thin and simmering it in a little broth or butter and garlic works wonders for me!

Nice late find! If it's still bright and tender (not faded or tough) and growing on a safe host like oak, it should be fine — just cook it well.
