I was reading in a survival fiction book with a lot of real in it. One of the things is describing how to use the roots to make a starchy flower and the long 'flower' as a way to get pollen to use.

I got tricked into eating a cattail when I was about 4. One of my earliest memories and I have despised everything them ever since... haha

That seems reasonable. I wonder if they can be cooked to be 'good'.
